Owl Oatmeal Cookies



1 1/2 sticks of butter-softened
1 1/4 c. light brown sugar
1 egg
1/3 c. milk
1 1/2 tsp. vanilla
1 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. cinnamon
3 c. quick cooking oats
pnb chips (for ears)
yellow frosting or yellow candy disks (for eyes)
Chocolate chips (for eyes)
candy corn (for nose)--or whole cashews if you have them

Combine butter, brown sugar, egg, milk and vanilla. Beat at medium speed.

Combine oats, flour, spices.

Mix into creamed mixture.

Bake at 375 degrees for 10-12 minutes

Once cool, add the ears, eyes and nose.

My son took these for a school snack while they were learning the letter O!

**I have tried several oatmeal cookie recipes in the past and this is the best one, by far! Also yummy with chocolate chips or m&m's!

Chicken and Cheese Enchiladas

1 can cream of chicken soup
1/2 c. sour cream
1 c. salsa
2 tsp. chili powder
2 c. chopped cooked chicken
1/2 c. shredded cheese
6-8 tortillas

1. Stir the soup, sour cream, salsa, and chili powder in a med. bowl.
2. Stir 1 c. of the mixture, chicken, and cheese in a large bowl.
3. Divide chicken mixture among tortillas. Roll up and place in baking dish. Pour remaining sauce mixture over tortillas. Cover.
4. Bake at 350 degrees for 40 minutes, or until enchiladas are bubbling.

Top with fresh garden onions and tomatoes, and a little sour cream!

I served this with seasoned mini tater tots and refried beans. It was a hit with my boys!

Pizza Pasta Casserole

My kids LOVE this!!! Super easy, too!

1 lb ground beef
1 small onion, chopped
1 small green pepper, chopped
1 jar spaghetti sauce
8 oz spiral pasta-cooked and drained
2 cups shredded mozzarella cheese
pepperoni slices

In large skillet, brown beef, onion and green peppers. Stir in spaghetti sauce and pasta. Transfer to a greased 9 x 13 pan. Sprinkle with cheese and arrange pepperoni over the top. Bake, uncovered at 350 for 25-30 minutes.

Fresh corn on the cob and apple slices....and you have a meal that my little boys can't get enough of! :-)

If you are feeling really ambitious....make a double batch and freeze a pan for later use!

Creamy veggie salad

Ingredients:
4 cups fresh broccoli florets
4 cups fresh cauliflowerets
1 package (10 ounces) frozen peas, thawed
5 green onions, sliced
1/2 cup sour cream
1/2 cup mayonnaise
1 to 2 tablespoons prepared horseradish
1/4 teaspoon salt
1/8 teaspoon pepper
I also like to include sunflower seeds and/or fresh bacon bits

Directions:In a large bowl, combine the broccoli, cauliflower, peas and onions (and the seeds and bacon, if using them). In a small bowl, combine the remaining ingredients. Pour over vegetables and toss to coat. Chill for several hours or overnight. Yield: 9 servings.

If using reduced fat sour cream and mayo: 1 cup equals 109 cal., 6 grams fat, 11 carbs, 4 grams fiber. That is also without the seeds or bacon bits.

Beef Taco Skillet

1 pound ground beef
1 can (10 3/4 oz) tomato soup
1/2 c. salsa
1/2 c. water
6 flour tortillas (6 in.) cut into 1 in. pieces
1/2 c. shredded cheddar cheese

1. Cook beef in skillet over med.-high heat until well browned. Drain.
2. Stir soup, salsa, water and tortillas in skillet and heat to a boil. Reduce heat to low. Cook 5 minutes. Top with cheese.

Very easy recipe that the whole family enjoyed! I served this with refried beans and fresh fruit and Jaxon was convinced this was "the best meal ever!" Enjoy!

Two yummy recipes!

Made both of these this week and they were a hit! Very simple, very yummy!

Southwest Creamy Pasta Bake

12 ounces uncooked spiral pasta
3 cups cubed cooked chicken breast
16 oz sour cream
2 cups shredded cheese
1 can cream of mushroom soup
1 can cream of celery soup
1 can green chili salsa
1 cup chopped green onions-I only had a 1/2 c. available and that was plenty
1 can olives-I omitted this ingredient ;-)

Cook pasta according to the package directions. Meanwhile, in a large bowl, combine the remaining ingredients. Drain pasta; stir into chicken mixture

Transfer to a greased 13 x 9 baking dish. Bake, uncovered, at 350 degrees for 30-35 minutes or until heated through.


Runza Casserole

1 1/2 pounds hamburger
1/2 c. chopped onion
1 small head cabbage, shredded
1 can cheddar cheese soup
1 c. grated cheddar cheese
2 cans crescent rolls

Brown meat and onion. Drain, add cabbage, cook 6 to 8 minutes in skillet (covered). Mix soup into beef and cabbage. Put 1 can of crescent rolls in bottom of 13 x 9 pan. Pour beef mixture on top, sprinkle with grated cheese. Top with second can of crescent rolls. Bake at 350 degrees for 20 minutes.

Slow cooker chicken spaghetti

1 (16 oz) pkg spaghetti, cooked and drained
1 (10.75 oz) can cream of chicken soup
1 (10.75 oz) can cream of mushroom soup
1 (10 oz) can rotel
8 oz velveeta
chicken breast cut into bite size pieces....I used Oscar Meyer chicken breast chunks, already cut up

1. Bring large pot of water to boil. Add spaghetti and cook for 10-12 minutes. Drain and set aside.

2. Put chicken soup, mushroom soup, rotel and cheese in slow cooker over medium heat. Stir together and cook until cheese is melted.

3. Stir cooked chicken and spaghetti into cheese mixture and heat through. Reduce heat to medium low and cook for about 40 minutes.

I made corn as a side, but it would also taste very good mixed in with it.

Both my boys ate this very well! That says a lot, because I struggle to find things that my picky 5 year old will eat!
